Raspberry
Raspberries
are a rich source of vitamin C, manganese, and dietary fiber. Research also
indicates antioxidant and antiproliferative (chemopreventative) effects may be
associated with the fruit.
Care
Instructions
Raspberry bushes prefer sunshine, so they should
be planted in an area that gets 6-8 hours of sunlight per day. Raspberries
prefer a sandy loam soil that is rich in organic matter. The soil should be
well-draining and have a pH of about 5.8-6.5. Ensure that you water the
bushes regularly. You will also need to prune raspberries as part of their
care. Summer raspberries should be pruned twice a year. You will want to prune
the growing raspberry bushes in the spring and right after you harvest the
fresh berries.
Recipe
Raspberry Crumble Bars
Ingredients (Raspberry Filling):
2 1/2 cups raspberries
2 tablespoons flour
1 tablespoon cornstarch
1/3 cup white sugar
1 lemon for juice
Ingredients (Crumble Layer):
3 cups rolled oats
2 cups brown sugar
1 teaspoon baking powder
1 1/2 cups melted butter
3 cups flour
1/2 teaspoon salt
Directions:
1. Preheat oven to 350°F.
2. Mix raspberries, sugar, flour, cornstarch + lemon juice.
3. Mix oats, flour, brown sugar, baking powder, melted
butter + salt into a crumble-like mixture.
4. Press 2/3 of the mixture into the bottom of a 9×13-inch
pan lined with parchment paper. Bake for 10 minutes.
5. Arrange raspberry layer on top of baked bottom
layer. Sprinkle with remaining crumble + bake an additional 25-30 minutes.
